I'm new to this making lunch for my child thing. I'm also new to this, making lunch for myself to take to work thing (all in the same week ahhhhh). When thinking about what nutritious food to make for my daughter lunches, easy to make and freeze snacks came to mind. Taking on a new job and writing a book will require a lot of my attention so if I can spend one day making
enough food for a months worth of meals and snacks, count me in! I started with energy bites because let's be honest, we all need some energy (maybe not the kids), In my daughters school we are not allowed nuts so in the following recipes I omitted the nuts and when required to use peanut butter, used sun-butter in its place as seed butters are fine. We made and tested all 3 of these recipes and they get the official Bee stamp of approval.
The best part is, they are super easy to make and freeze very well. I'll just grab one from the freezer the night before and stick it in her lunchbox and by the time she gets to lunch, it has thawed but is still held together due to it being previously frozen.
